Shigatse has the best highland barley in Tibet. And what is brewed from this kind of grain is highland barley wine, called chang in Tibetan.
Today, although there is canned highland barley wine, it loses its flavor. There are also handmade highland barley wine brewed in a winery workshop, which must be drunk fresh, and it must be drunk as soon as it is taken outside as it becomes tasteless soon after.
Now, there are less and less handmade highland barley wine in Lhasa; even in the city of Shigatse, it is hard to find a good and sizeable highland barley wine workshop. So, if you ever come across one, you should not miss the chance! In these small wine shops, you can also experience a variety of interesting drinks.
For example, there are different kinds of drinking vessels made from silver, gold, wood, glass, and even yak horn that made the taste a little different.
In another example, ginseng and tsampa are added to the wine to create a nutritious porridge. This porridge is called "chang-go".
Highland barley wine is not strong, but it is very powerful.
The Shigatse people are very welcoming and their hospitality is the door to guests' hearts. The key to this door is highland barley wine. Here, you can let go of your fatigue. The taste of the wine is also the taste of life.
